I got this recipe from my mother in law Ruanne, and modified it to make it dairy free.
Ingredients:
2 sticks soy butter (don't worry it tastes like real butter)
3/4 c. cocoa powder
2 c. sugar
4 eggs
2 t. real vanilla (fake vanilla has caramel color)
1 1/4 c. flour
1 t. salt
1 c. chopped nuts (optional)
1. Preheat oven to 350'. Grease a 9x13 pan.
2. Melt soy butter, add cocoa, sugar, add eggs one at a time beating well after
each. Stir in vanilla, then flour and salt. Do not over beat.
3. Pour in pan and bake for about 40 minutes or until a toothpick inserted in the middle comes out clean.
