This is one of my many "in the skillet" creations. I found that Rice a Roni has a small variety of pre-packaged rice that has no dairy ingredients, however always be sure to check before you buy or eat.
Ingredients:
2 boxes chicken flavor Rice a Roni
3 T. soy butter
5 c. water
1 large chicken breast
1 c. fresh or frozen cut carrots
1/2 c. fresh or frozen peas
1. In a large skillet, combine rice and soy butter. Saute over medium heat until rice is golden brown, stirring frequently.
2. Slowly stir in water, seasoning, chicken, carrots , and peas. Bring to a boil. Cover and simmer for 5-10 minutes until rice is cooked.

Snickerdoodles
I got this recipe from my mother in law Ruanne, and modified it to be dairy free.
Ingredients:
1/2 c. soy butter
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 t. cream of tarter
1 t. baking soda
1/4 t. salt
2 3/4 - 3 c. flour
2 T. sugar
2 t. cinnamon
1. Preheat oven to 400'.
2. Beat together soy butter, shortening, and sugar. Add and beat eggs.
3. Blend in cream of tarter, baking soda, and salt. Stir in flour.
4. Stir together sugar and cinnamon.
5. Shape dough into about 1" balls and roll in sugar mixture. (Kids love doing this part!)
6. Bake 8-10 minutes until set. Cool for a minute on the cookie sheet, then cool on a wire rack the rest of the way. The cookies will flatten as they cool.

3/4 c. cocoa powder
2 c. sugar
4 eggs
2 t. real vanilla (fake vanilla has caramel color)
1 1/4 c. flour
1 t. salt
1 c. chopped nuts (optional)
1. Preheat oven to 350'. Grease a 9x13 pan.
2. Melt soy butter, add cocoa, sugar, add eggs one at a time beating well after
each. Stir in vanilla, then flour and salt. Do not over beat.
3. Pour in pan and bake for about 40 minutes or until a toothpick inserted in the middle comes out clean.
